McIntosh
Discovered in 1796 by John McIntosh in Ontario, Canada and officially named in 1870, this medium to large baking apple is a favourite. The trees love the cold, and after many Baldwin orchards froze during the winters of 1934-35, McIntosh largely replaced them in New England orchards. Macs have snow white, fine flesh and a tart spicy taste. Often mealy when bought in groceries, a fresh Mac makes delightful pies and my mother prized them for her red-hot apple sauce.
